Stephanie's Summer Salad and Homemade Dressing
From the kitchen of FitnessFest Gila River Presenter Stephanie Kreun
Mixed Greens (romaine and spring mix are great choices!) Sliced strawberries Feta cheese Grilled chicken breast Avocado Dried cranberries or cherries
1/2 c olive oil 1/4 c balsamic vinegar 1 tsp honey 1 tsp Dijon mustard 1 shallot, minced 1 clove garlic, minced salt and pepper to taste
Note: This dressing lasts a long time in the fridge! Just be sure to take it out early for your next salad, as the oil coagulates.
